Avocado Purée



Also known as the Alligator Pear, the avocado has become cream of the fruit crop. Avocados are loaded with anti-oxidants, which attack free radicals in the body that cause early aging and disease. Its high healthy fatty acid content, namely oleic acid, helps to reduce inflammation, fight cancer and heart disease, reverse arthritis, balance blood sugar and improve digestive health. Do you need another reason to make this yum-o side sauce, great for any protein topper?

 

To remove the pit from an avocado, hit the pit with a sharp knife and then turn the knife to the right. Pit will come right out. Use another blunt tool. like a wooden spoon, to knock the pit off the knife. 

 

Ingredients

  • 1/2 cup chopped fresh cilantro

  • 1/4 cup chopped red onion

  • 1/4 cup extra virgin olive oil

  • 4 limes, juiced

  • 2 ripe Hass avocado, peeled, pitted and coarsely chopped

  • Salt and freshly ground black pepper

 

Directions

  • Combine the cilantro, onions, oil, lime juice and avocado in a food processor and process until combined, but still chunky. 

  • Puree until smooth if desired. 

  • Season with salt and pepper.

 

Serves: 8
