Rebecca's Curried Cauliflower

 

One special client rattled off this recipe during a session, and now my mouth waters when I think about making it. I do love Indian food and the smell of curry and cumin in my house makes me fantasize that I'm actually far, far away in Mysore, India, having a home-cooked meal in the house where Pattabhi Jois once lived. Then one of my kids pipes in "Mom, what's that smell?" and poof...I'm back. Curry's main spice is turmeric, which has become a celebrity spice lately for its anti-inflammatory nutrient called curcumin. This superfood spice has anti-aging, cancer-fighting, Alzheimer's-reversing potential. 

 

Ingredients

  • 1 head cauliflower - large

  • 1-2 T extra virgin olive oil

  • 1 T curry powder

  • 1/2 T cumin seeds

  • 1 tsp Kosher salt

  • Lemon juice from half a lemon

  • 1/8 tsp cayenne

 

Instructions

  • Combine all ingredients in a ziploc bag and shake until completely coated.

  • Broil on high for 10 minutes or until slightly browned and fragrant, tossing once.

 

Serves: 2-3

Time: 20 minutes
