Shakshouka - Two ways

Also called Eggs (or Beans) in Purgatory, this dish is one of those that my husband says is "lights out." :) Packed with nutrients, this isn't any old one-pot tomato sauce dish. So easy to make, so tasty and so delicious the next day too. You can make this traditionally with eggs or replace them with the white bean salad. The white bean salad blended up into a dip is also a crowd-pleaser! Enjoy! 

 

Ingredients

•4 T Extra Virgin Olive Oil

•1 pint Grape or Cherry Tomatoes

•1 Red Bell pepper, Diced

•1 whole Leek, greens and bulbs minced

•1 clove Garlic, minced

•2 cups Kale, stems removed and chopped finely

•1 T Ground Coriander

•1 T Ground Cumin

•1 tsp Kosher Salt

•1/8 tsp Red Pepper Flakes - optional

•1 T Tomato Paste

•1 cup (or more) Tomato Sauce

•6 Eggs - OPTIONAL, see White Bean Salad below for vegan option

•Juice of One Lemon

•Goat’s Milk Feta – optional for topping

•Basil – optional for topping


Preheat oven to 400º, convection if possible. Line sheet pan with parchment. Toss tomatoes and chopped red pepper lightly in olive oil right on pan, or use an olive spray, and roast for 15 minutes.

 

In a large sauté pan, over medium-high heat, sauté olive oil, leeks and spices for for about 5 minutes. Add garlic, red peppers, tomatoes, and kale. Mix well and sauté for about 2 minutes. Add tomato sauce, tomato paste and lemon juice, mix well. Add more tomato sauce if needed.

 

Make White Bean Salad below if using beans.

 

Using a spoon, make six wells in mixture, add eggs or white beans to wells. Cover and cook over medium heat for 5 minutes, or until beans are heated through or eggs are cooked as desired , traditional recipes calls for runny eggs. Top with basil chiffonade and crumbled feta.

 

White Bean Salad or Dip

•1 can White Beans – Great Northern or Cannellini, drained and rinsed

•3 T Lemon Juice

•2 T Olive Oil

•1 T Fresh Minced Dill

•½ clove Fresh Minced Garlic

•½ tsp of Salt

•1 T Water – for dip only

For Salad:  mix all ingredients, except water, in a small bowl

For Dip:  blend all ingredients in a high-speed blender until smooth.

 

Makes: approx. 4-6 servings
