Tart Basil Vinaigrette

 

This recipe is fondly referred to as liquid gold by friends, family and clients. Keep it on hand at all times. Great for veggies, proteins, salad dressing or by the spoonful if you can't help yourself. It just tastes like summer and is the dressing I used on my grilled summer salad. Don't be shy with the red wine vinegar. It's what makes this a dressing and not a pesto. 

 

 

Tart Basil Vinaigrette (on right in photo)

 

  • 2 cups tightly packed fresh basil leaves

  • 1 garlic scape or 1 clove garlic and/or 1 shallot

  • 1/2 cup extra virgin olive oil

  • 3-4 T red wine vinegar (depending on how tart you like it)

  • 1 tsp salt

  • Combine all the ingredients in Vitamix or blender until smooth. 

 

Makes: about 1.5 cups

Time: Less than 5 minutes
