Avocado Vinaigrette

Just had a health coaching client make this dish and recommend that everyone

in the group have in their fridge all the time. Thought I better pull it out from the recipe, so everyone has is at the ready!



Avocado Vinaigrette



  • 1 Ripe Avocado, halved, pitted, peeled & chopped

  • 1/3 cup lime juice (freshly squeezed is preferable)

  • 3 T red onion, coarsely chopped

  • 2 T water   

  • 2 tsp raw honey

  • 1/4 tsp ground cumin   

  • 1/4 tsp salt (you can add more after blending ) 

  • 1/4 tsp fresh ground Black Pepper

  • 1/4 C  Extra Virgin Olive Oil (mild)



  • Combine all ingredients except Olive Oil in food processor and blend until smooth. 

  • With motor running, add oil in a slow drizzle and blend until emulsified. Adjust seasonings and add more salt if needed. If mixture is too thick, add a little water (tablespoon at a time) to a pourable consistency.
