Avocado Vinaigrette
Just had a health coaching client make this dish and recommend that everyone
in the group have in their fridge all the time. Thought I better pull it out from the recipe, so everyone has is at the ready!
Avocado Vinaigrette
Ingredients

1 Ripe Avocado, halved, pitted, peeled & chopped

1/3 cup lime juice (freshly squeezed is preferable)

3 T red onion, coarsely chopped

2 T water
-
2 tsp raw honey

1/4 tsp ground cumin

1/4 tsp salt (you can add more after blending )

1/4 tsp fresh ground Black Pepper

1/4 C Extra Virgin Olive Oil (mild)
Instructions

Combine all ingredients except Olive Oil in food processor and blend until smooth.

With motor running, add oil in a slow drizzle and blend until emulsified. Adjust seasonings and add more salt if needed. If mixture is too thick, add a little water (tablespoon at a time) to a pourable consistency.
