Avocado Frosting

One of my favorite ways to play with food is to take a traditional recipe and make it healthier. So when I saw green frosting out there on the foodweb, I knew I had to give it a try. This concoction is super simple and extremely tasty. I brought this beauty to a family party and no one hesitated when I said it was avocado. I finally broke them in! I doubled the recipe for this double decker.

Ingredients​

  • 1 avocado, flesh cubed

  • 1 tsp vanilla extract

  • 2 T maple syrup

  • 1⁄2 tsp lemon juice

Instructions

  • Load all ingredient into a small blender or Vitamix, starting with liquid first.

  • Blend until smooth. Use spatula to spread on cake or cupcakes. I used Cherrybrook Kitchen's Gluten Free Chocolate Cake Mix here. 

  • Serve immediately. 

  • To make ahead, transfer frosting to a glass bowl and press plastic wrap all the way down on to the top of the frosting and up the sides of the bowl to prevent air from getting in and turning avocado brown. Refrigerate up to 8 hours or freeze up to overnight.

TIME: 10 Minutes plus cake time.
