Creamy Cauliflower Soup

 

I heart this soup. When you want something simple and soothing, healthy and heartful, this soup is the way to go. And super easy to make. Avocado, cashews and tahini put the creamy in this soup. Can be a great base if you want to be experimental and layer in the flavor.

 

Ingredients

  • 2 T avocado oil

  • 1/2 medium onion 

  • 1 clove garlic minced

  • 1 head cauliflower cut into 2-inch chunks 

  • 1/4 cup fresh ground almond butter or 1/4 cup raw cashews

  • 4 cups broth or filtered water

  • 1 T tahini

  • 1/4 avocado

  • salt and pepper to taste

 

Instructions

  • Heat the oil in a medium pot over medium-high heat. Add the garlic and onion and cook for 5 minutes, until translucent.

  • Add four cups of broth or filtered water, cauliflower, almond butter or cashews, and tahini. Bring to a boil.

  • Reduce heat to low and simmer for 15 minutes.

  • Let cool 5 minutes.

  • Transfer to Vitamix or blender and blend with avocado until smooth. 

  • Season with sale and pepper. 

  • Drizzle with extra virgin olive oil and top with chopped parsley if desired. 

 

Serves: 4
