Chocolate Chia Mousse
Ok, I'm going to say ridiculously healthy and dessert in the same sentence...this chocolate chia mousse is a ridiculously healthy dessert. With avocado and chia, you're talking healthy fat galore - the omega-3 fatty acid kind that reduces inflammation. Cacao and honey both have immune-boosting qualities and antioxidants, so you actually get healthier by eating this dessert!
Ingredients

1 ripe avocado

1/4 cup organic raw honey

1/4 cup cacao powder. Set aside 2 T from the 1/4 cup. (Cacao is bitter. Taste for flavor as your mix in.)

1/4 cup ground chia seeds

1/4 teaspoon kosher salt

2-4 tablespoons almond milk

2 teaspoons vanilla extract
Instructions

Combine all ingredients except almond milk and 2 T cacao in a blender and blend until well combined.

Slowly add 1 tablespoon of almond milk until desired consistency

Taste to determine if you want to add the extra 2T of cacao.

Refrigerate for at least 1 hour before serving.

Add chopped almonds, walnuts, berries or whipped cream if you can tolerate dairy before serving.
Serves: 2
