Cauliflower Hummus

For your 4th of July BBQ weekend ahead, here's a cauliflower carb-free dip that is a happy chickpea replacement to any buffet. If you're keeping your sugar intake low, the sweetness in the cauliflower will taste surprisingly pretty sweet. Serve with savory chips like Mary's Gone Crackers or sliced cucumber rounds. 

 

Ingredients

  • Florets from 1 medium head cauliflower

  • 3 T extra virgin olive oil

  • 1 clove garlic

  • 1/3 cup tahini

  • Juice from 1/2 - 1 whole lemon (to taste)

  • salt + pepper to taste

  • Micro greens for garnish

  • Mary's Gone Crackers and cucumber rounds for serving

 

Instructions

  • Preheat oven to 400 degrees. Line baking sheet with parchment paper.

  • Toss florets with 1T olive oil, sprinkle with Kosher salt and spread evenly on baking sheet. Roast for 40 minutes, tossing a couple times. Remove from oven and cool.

  • Combine cauliflower, garlic, tahini, lemon juice, 2 T olive oil, salt and pepper in Vitamix or high speed blender. Blend until smooth. Add water and/or lemon juice to thin consistency if necessary. 

  • Garnish and serve.
