Cauliflower Cous Cous
I'm so happy I live in a time that I'm no longer in danger of choking on a dry cauliflower floret. Serious salad killer for me - raw cauliflower. But now I'm obsessed with cauliflower that mimics rice or cous cous like this recipe. Super simple. Super healthy - maybe too healthy for some, e-hem Mark.
Ingredients

1 small head cauliflower, washed, trimmed down to small florets.

2 T extra virgin olive oil + 1 tsp

2 T pumpkin seeds

1 tsp sesame seeds

Juice of 1/2 a lemon

salt to taste

2 T chopped parsley or mint to garnish

Instructions

Heat olive oil over medium high heat

Brown cauliflower, but keep it firm, work in batches if needed and transfer to a bowl to cool.

Add 1 tsp of oil to the pan over low heat. Toast pumpkin seeds until lightly brown and transfer to a bowl. Mix in sesame seeds.

Pulse cauliflower in batches in a high-speed blender. Add back to the bowl.

Add lemon juice, more to taste if preferred. Mix in seeds and taste to taste.

Add chopped parsley or mint to garnish.
