Grilled Watermelon and Peaches
What looks like fruit but tastes like ribs? Grilled fruit! Lately it seems like chefs are throwing everything on the grill...lettuce, avocados, fruit. Fruit is hard to resist in the summer. Winter's no problem - don't even have a taste for it - but summer screams juicy fruit. Good for curing both a crunchy and sweet craving, fruit is truly natures candy.
Grilled fruit is so easy, looks summery and, as long as your grill is clean, it doesn't taste like ribs at all - that was a joke. To grill fruit like watermelon, slightly under ripened peaches, or pineapple, lightly coat each side with olive oil and grill over medium heat. To really mess with your taste buds, melt 1T of butter with 1 T raw honey and add 1/8 tsp of cayenne. Lightly brush both sides and grill over medium heat. Check often, but most likely fruit will be good and grilled at 2 minutes a side. Peaches can take a little longer depending on how ripe they are. Sprinkle with mint and eat right away for best taste and texture.
