Eggsiflower

Summer is my least creative time in the kitchen, because there's no need to doctor up a fresh veggies. Eat as is. I like to grill, make dressings, pick fresh herbs and enjoy what nature intended. So breakfast has become my time to play. I love eggs and have eaten them every day for years. So when I decided to toss them with cauliflower rice one morning, I have been addicted ever since. Simply, sauté riced cauliflower in one tsp of olive oil over med heat. Add whatever veggies you like... shallot, red pepper and herbs one morning, zoodles (zucchini noodles) with herbs another morning, tomato basil the next. Scramble with 1-2 whole eggs and supplement with egg whites if you're hungrier.
