Millet Tabbouleh

 

A great Mediterranean gluten-free side dish. If you've never had millet, give it a try. It pops open like tiny pieces of popcorn, actually kinda tastes like corn and has a great crunchy texture. Love. This. Dish.

 

Ingredients

  • 2.5 cups whole cooked millet (use one cup dry, see prep in instructions) 

  • 2 diced Plum tomatoes, seeded 

  • ½ cup seeded, diced cucumber 

  • 1 finely sliced green onion

  • ½ cup finely chopped Italian parsley 

  • ¼ cup freshly squeezed lemon juice 

  • 1/3 cup extra virgin olive oil 

  • ½ tsp Kosher salt, or to taste 

 

Instructions

  • Cook millet according to directions.

  • Place all chopped vegetables in a large bowl.

  • Pour lemon juice and olive oil over vegetables.

  • Add seasonings and cooled millet. Stir to mix. Refrigerate overnight for full flavor.

 

Serves: 4

Time: 10 minutes after millet cooks
