Millet Tabbouleh
A great Mediterranean gluten-free side dish. If you've never had millet, give it a try. It pops open like tiny pieces of popcorn, actually kinda tastes like corn and has a great crunchy texture. Love. This. Dish.
Ingredients

2.5 cups whole cooked millet (use one cup dry, see prep in instructions)

2 diced Plum tomatoes, seeded

½ cup seeded, diced cucumber

1 finely sliced green onion

½ cup finely chopped Italian parsley

¼ cup freshly squeezed lemon juice

1/3 cup extra virgin olive oil

½ tsp Kosher salt, or to taste
Instructions

Cook millet according to directions.

Place all chopped vegetables in a large bowl.

Pour lemon juice and olive oil over vegetables.

Add seasonings and cooled millet. Stir to mix. Refrigerate overnight for full flavor.
Serves: 4
