Peruvian Green Sauce 

 

For my cilantro-loving friends. This is my all-time favorite sauce to top on any protein or to dip veggies in. Easy and delish, what more could a girl want?

 

Ingredients

  • 1 bunch fresh cilantro, leaves and stems (approx. 1 -1.5 cup packed) 

  • 6 T extra virgin olive oil

  • 1/4 cup fresh squeezed lime juice (approx. 2 medium limes) 

  • 1 large or 2 small cloves of garlic 

  • 1 Jalapeño pepper (or more to taste), seeds and stem removed 

  • 1/4 tsp fresh ground black pepper

  • 1/4 - 1/2 tsp Kosher salt

 

Instructions

  • Wash and coarsely chop the cilantro leaves and stems. 

  • Pulse all ingredients in a food processor or blender a few seconds until smooth. Do not over-process. 

  • Taste the sauce and add hot peppers, black pepper or salt as needed. The sauce tastes best when fresh, but can be stored for up to two weeks refrigerated in a covered container.
