Sautéed Cabbage with Parsley & Lemon

 

I agree. Cabbage? Really? I say yes. Brussels Sprouts have made a comeback so why not its sister cruciferous vegetable? Cabbage is extremely alkalizing, which means it balances out the acidic levels in our blood to make us feel like Popeye. Actually this whole recipe is alkalizing - cabbage, lemon, parsley, onion. So, think of this dish as a Swifter for your system, cleansing and detoxifying with each bite. Plus I found this recipe in Cook's Illustrated - as you know, according to Mark, that gives it a stamp of approval!

 

Ingredients

  • 1 small cabbage - green or purple, cored and sliced thin. 

  • 2 T extra virgin olive oil

  • 1 small onion, sliced thin or diced

  • 1/4 cup parsley

  • 2 tsp lemon juice

  • 1/4 Kosher salt

  • 1/4 pepper

 

Instructions

  • Place cabbage in a large bowl and cover with cold water for 3 minutes. Strain and set aside.

  • Heat 1 T of avocado oil over medium-high heat.

  • Add onions and sauté until soft. Transfer onions to a plate.

  • Add 1 T of avocado oil to empty sauté pan. Heat until shimmering.

  • Add cabbage, sprinkle with 1/4 tsp Kosher salt and 1/4 tsp pepper. 

  • Cover and cook without stirring until cabbage is wilted and slightly browned, 3 minutes.

  • Sitr and continue to cook until cabbage is "crisp-tender" and lightly browned. 

  • Remove from heat. Add onions, parsley and lemon. 

  • Season with salt and pepper and serve,
