Simple Spicy Shrimp Tacos
If my attention wanders while I'm reading a recipe, I immediately know I will never make it. I find my mind typically drifts around the 10th ingredient. But, if I find an easy recipe that I know I can make even easier, then chances are I'll make it - probably that night.
Sitting in the my car today outside the grocery store scrolling through recipes on my phone as I often do, I found several recipes for shrimp tacos that had potential. Weeding out any recipe that had the word "slaw" in it, I concocted this one by blending the salsa. It's not that I don't like slaw, it's just that I don't have time for slaw on a Wednesday night. This whole meal took me under 20 minutes and earned me a couple "sombreros off to the chef" in my house. Fresh, simple, clean and delicious. Enjoy!
Ingredients
Shrimp:

16-20 medium shrimp, peeled and deveined

1½ tablespoon extra virgin olive oil

1 clove garlic, minced

½ teaspoon ground cumin

½ teaspoon chili powder
-
¼ teaspoon onion powder

¼ teaspoon kosher salt
Salsa:
-
1 tomato, seeded and chopped
-
3 T jalapeno, seeded and chopped
-
½ teaspoon salt
-
¼ teaspoon black pepper
-
Juice from half a lime
-
¼ cup fresh cilantro leaves, stems ok
Extras:
-
6 small corn tortillas
-
Sour cream – if you use dairy
-
Avocado slices
-
Chopped cilantro
-
Lime juice
Instructions

In a medium bowl whisk together olive oil, garlic, cumin, chili powder, onion powder, and salt. Add in shrimp and toss to coat. Let sit for at least 10 minutes.

While you wait: Combine tomato, jalapeno, salt, pepper, lime juice, and cilantro in a high speed blender until well mixed.

Heat oil a large skillet, preferably cast iron, on medium high. Add shrimp. Cook until pink and cooked through, about 2-3 minutes per side.
To assemble:

One corn tortilla
-
One slice of avocado
-
2-3 shrimp
-
A couple spoonfuls of salsa

Top with cilantro, lime, sour cream as you wish. Enjoy!
MAKES: 6 tacos depending on size of shrimp
TIME: 20 minutes, 30 max.
