Spinach Walnut Pesto

The walnuts in this pesto give this side sauce a big wellness wallop. Pesto is a great condiment to have around for wraps, pasta or as a protein partner. This version packs in the healthy omega-3 fatty acids and high protein content by using walnuts instead of the traditional pine nuts. The spinach addition helps you sneak in your greens!
Ingredients

2-3 cups spinach

1 cup fresh basil leaves

1/2 cup fresh parsley

1/2 cup raw walnuts

1/4 cup extra virgin olive oil

1/8-1/4 tsp. kosher salt

1 clove garlic
Instructions

Place all ingredients in a food processor and pulse to a slight chunky consistency.

Store in air-tight container for up to 5 days.
Servings: 1.5 - 2 cups
