Go-to Tomato Topper
We get into some serious tomato topper kicks - and then burn out. It's great on anything...grilled chicken, broiled fish, scrambled eggs, salads, baguette or just by itself as a stand alone side dish. The oil cuts the tartness of the tomatoes and vinegar, but the tartness is what puts the yum in this dish. Add avocado, because avocado and tomatoes go together like bread and Buddha.
Take out of fridge at least 20 minutes prior to eating to let the oil loosen up again.
Ingredients

1-2 containers organic baby tomatoes, sliced in half.

3 T red wine vinegar

1-2 T chopped shallot or red onion

1/4-1/2 tsp Kosher salt to taste

1/4 cup extra virgin olive oil

2 T chopped basil

1 small clove garlic
Instructions

In a bowl combine red wine vinegar, shallot, salt and garlic if you like.

Whisk in 1/4 cup olive oil.

Add basil.

Pour over tomatoes. Stir and enjoy! Tastes better as it sits.
