Broccoli-Cauliflower Rice

 

For the moment, this is my favorite side dish. All veggie. Great for soaking up some good sauce. Fantastic with the Chicken Shawarma. Super easy to make with plenty of leftovers for days if you use the whole medium cauliflower head. And...our boys had no idea (until I told them) that it wasn't really "rice."

Ingredients

  • 1 head cauliflower - medium, riced

  • 2 cups finely chopped broccoli

  • 1 garlic clove, finely chopped

  • 1 T extra virgin olive oil

  • 1 tsp ground cumin

  • 1/2 T cumin seeds

  • 1/2 cup onion, finely chopped

  • 1 cup frozen peas

  • salt and pepper to taste

 

Instructions

  • Heat oil in large skillet over medium-high heat.

  • Sauté onions until soft.

  • Sauté garlic until fragrant.

  • Add cauliflower and broccoli.

  • Stirring occasionally until veggies are soft.

  • Add cumin and cumin seeds. Mix well. 

  • Add peas.

  • Cover and reduce heat to medium-low. Steam for 3 minutes. 

  • Take off cover and sauté a little longer to brown slightly.

  • Season with salt and pepper to taste.

 

Serves: 4-6

Time: 30 minutes
