Cauliflower Pizza Crust
Cauliflower is a great alternative to other gluten-free crust. I know parents who can trick their kids into eating veggies this way. My kids are always on to me, so I don't have that advantage. You can shape the dough any way you like or make garlic "bread" as well. Simply make the dough more square, add minced garlic or garlic powder, and then cut it into strips after it has cooled slightly. For pizza, add any toppings you'd like after the dough has cooked through.
Ingredients

One pound organic cauliflower

Two organic eggs

1/2 tsp kosher salt
Directions

Preheat oven to 400°F.

Make cauliflower rice. See Cauliflower Rice recipe to learn how to rice cauliflower.

Microwave cauliflower plain in a bowl for about 5 minutes until tender.

In a bowl, mix egg and cauliflower until well combined.

On a parchment-lined baking sheet, spread cauliflower dough out until it resembles a pizza round.

Bake for 40 minutes.

Top however you want and bake in a 450°F oven for 7 minutes or until cheese and toppings have cooked through.
