Here’s a super simple trick to improve a fruit salad – add lime, sugar and a pinch of salt. That’s it. Nothing profound but it works like a charm. The lime gives the fruit a nice tangy citrus flavor. The sugar adds a touch of sweetness. The salt boosts all the flavors and draws some water out of the fruit. After adding the ingredients, let the fruit sit for a few minutes to blend the flavors. Thoroughly toss everything before eating. After the fruit is gone, you’ll have some delicious juice left over. I sip it like juice soup. Want to try making it Mexican style? In addition to the lime and sugar add a little bit of chili powder.
6 cups of chopped fruit of your choice – rasberries, blueberries, grapes, pineapple, strawberries, apple, kiwi, pear, etc.
2 - 3 T lime juice
1 heaping teaspoon of sugar, honey, or coconut sugar.
Pinch of kosher salt
1 heaping T finely chopped fresh mint (optional)
Place cut up fruit in a large bowl.
Add 2 T of lime juice, sugar and pinch of salt and toss to combine. Taste for seasoning. Add more sugar or lime according to taste.
Optionally you can add a heaping tablespoon of fresh mint. Let stand for a few minutes.
Toss again. Serve immediately.
Pam's Note: I personally don't add sugar to my fruit. However, this recipe does make fruit salad more of a "dessert" and my boys love it when Mark makes it. I would opt for the coconut sugar though!
