My go-to meal is always a lean protein and some veggies. Especially during summer. I just throw both on the grill. To spice it up, I add a side sauce. Using the Zen Blend's Southwest Fiesta pack, I blended 2 T of spice, the juice of 1 lime, 1 T olive oil and 1 large avocado. Place southwest sauce under your salmon to enjoy with every bite!
Using Zen's Dal blend, I made a curried cauliflower rice. Either buy riced cauliflower or rice it in small batches by blending dry in a high speed blender. Sauté onions and garlic in 1T olive oil until fragrant, add riced cauliflower. Cook until soft. Add 1 T cumin seeds, 1/2 tsp Kosher salt, and juice of 1/2 -1 lemon to taste. Great as a side or even a meal.
