My Favorite 5-Minute Summer Dressings
These dressings have everything going for them...They take no time at all. They use simple summer ingredients that you simply wash, chop and pulse. And they taste so delicious that I would lick the bottom of my Vitamix clean if I could. Both are green, clean and good as dressings for salads, dips for veggies, and side sauces for protein. Consider having both made at all times for the rest of the summer!
Avocado Parsley Dressing
If you read my Accidental Amazing Salad then you know I've made this dressing every week this summer. Add less water for a dip or side sauce, more water for a dressing.
1 small avocado
1⁄2 bunch parsley with stems, washed
Juice of 2-3 lemons - depending on how tart you like it
1⁄4 cup olive oil
1/4 - 1/2 cup water
1⁄2 tsp salt
black pepper, to taste
optional: touch of shallot or garlic
Combine all the ingredients in Vitamix or blender until smooth.
Makes: about 1.5 cups
Time: Less than 5 minutes
Tart Basil Vinaigrette
This just tastes like summer. It's the dressing I used on my grilled summer salad. Don't be shy with the red wine vinegar. It's what makes this a dressing and not a pesto.
2 cups tightly packed fresh basil leaves
1 garlic scape or 1 clove garlic and/or 1 shallot
1/2 cup olive oil
3-4 T red wine vinegar (depending on how tart you like it)
1 tsp salt
Combine all the ingredients in Vitamix or blender until smooth.
Makes: about 1.5 cups
Time: Less than 5 minutes
